Health risk from tomato paste

Tomato paste is a main ingredient in Italian dishes like lasagna and pizza. However, these no longer taste so good if they endanger your health. Mold toxins and pesticides spoil food.

Mold toxins, also called mycotoxins, are metabolites of mold that can have a toxic effect. In a recent test, the alternative toxins alternariol and tenuazonic acid were found in almost half of all samples. These are among the mycotoxins and are often referred to as black mold. Alternariol is suspected of damaging the genetic makeup and tenuazonic acid can inhibit the body's own proteins.

There are currently no legal limit values for alternative toxins in food. However, since a possible health risk is assumed, so-called "Indicate Levels" are up for discussion. To ensure that these are not exceeded in the future, it must be checked whether the contents can be reduced by selecting a suitable raw material.
